GLUTEN ANALYSIS- ELISA Competitive Analysis



Test Purpose: this test allows the quantification of gluten toxic peptides in wheat, barley and rye.


Samples type: syrups, alcoholic drinks, and hydrolyzed food with proteolytic enzymes.


Quantification limit: 1.5 ppm gluten.


Delivery term: Within 2 working days after sample receipt if the quantity of gluten is less than 150 ppm of gluten.


Technique description: Competitive ELISA is an immunological colorimetric technique that uses the G12 monoclonal antibody. This antibody recognizes gliadin toxic epitopes in hydrolyzed and cooked food. During the test, the samples with the reagents turn to a colour whose intensity is inversely proportional to the gluten concentration in the sample. The sample is quantified by comparison with a standard curve.


Controls included in the test:

  • - Negative control: gluten-free maize flour.
  • - Positive control: maize bread with a known quantity of wheat gluten (55-56 ppm wheat gluten).
